Cornucopia is one of the largest growers of pure Criollo cacao beans in the world. The Criollo cacao variety is a rare adaptation of the Theobroma Cacao plant, which is believed to have been perfected by the pre-Mayans and Mayans through continuous selection and propagation of the best flavored beans. Criollo is known for it's complex flavor signature and a lack of bitterness found in the more common Forestero variety bean, which is the primary cacao bean used in roughly 90% of the world's chocolate. Simply put, Criollo is the rock star of cacao!
